Quite simply, the lure of trade and exploration for European societies was wealth and power. The three great European nations of England, France, and Spain built empires as they conquered Africa, some Asian countries and parts of others such as Hong Kong, and the Americas. There were natural resources to be had, people to enslave and control politically, land to acquire, artifacts and coffers of gold and silver to possess.
