Gordon Ramsay shows how the desire for shark fin as an ingredient in food is decimating shark populations throughout the ocean in Shark Bait. He is genuinely angry as he tracks down shark fins for sales, learns how they're cooked, and finds out about finning. One notable thing he discovers is that shark fin doesn't really have a distinctive taste in the way it's prepared. Nonetheless, the cruel practice continues.

As he travels, he finds that people are very opposed to the investigation he is doing. People actually try to physically retaliate against them.

Human intervention in the ocean ecosystem is causing shark populations to decline as much as 90 percent in certain areas. Fishermen hunt them for their fins, cut them off, and then throw the shark back into the ocean—where it will die. Unfortunately, shark fin is a delicacy that certain parts of the world are hungry for. Ramsay finds a great deal of it for sale at markets, restaurants, and food vendors as he explores.

Sharks are a keystone species that help keep the ocean's ecosystem intact. They make sure that populations of the species they eat stay at sustainable numbers. They're the top predator in the ocean, which means that they help manage every single species beneath them. Removing mass amounts of them from the food web means that species below them will grow in number and won't have enough food to live off of.
