Hmm. They could, sure. You can compare and contrast anything. However, it is kind of a stretch to compare these three, because to be honest, they don't have that much in common. You could always compare structure or style, of course, and all three stories contain characters from ethnic minorities.

Can you choose just two? If so, I'd go with either Everyday Use and The Red Convertible or The Red Convertible and A Rose for Emily. My reasoning? The first two focus on situations specific to ethnic minorities, and include highly symbolic objects (the quilt, the car). The last pair include highly dramatic deaths and ending revelations.
You could always look at key moments in the stories and compare them. For example, compare the forces that changed each main character.
