Ingredients in the Aztec Grain Salad provide a variety of nutrients. The main ingredient, quinoa, is a nutrient rich grain. Due to the relatively high levels of the amino acids lysine and isoleucine in quinoa, it can be considered a complete protein, whereas most grains are not. Quinoa also is a good source of antioxidant phytonutrients such as quercetin and kaempferol. It is high in Omega 3 fatty acids, and minerals, such as manganese, phosphorus, and magnesium. It is also a good source of fiber.

Granny Smith apples provide vitamin C, and the flavonoids cyanidin and epicatechin. They are high in fiber and help to regulate blood sugars.

The Butternut Squash contributes Vitamin A, and the B Complex vitamins, while also providing flavonoids. In addition, butternut squash contains minerals such as iron, zinc, copper, calcium, potassium, and phosphorus.
