You can expand the idea of #2 by getting students to test each other on the vocabulary on a given chapter. That will definitely ensure that they learn the words they do not know by themselves very well! I have used this strategy before and it works incredibly well, as getting students to design the questions and pick the vocabulary words gives them involvement in something that normally only teachers do.
Why not have students create their own? This will keep them more engaged in the text, and also take the work off you. Here is what I do. I give students a chart as they read. The chart has a column for the word, the page number, the context (such as sentence, or a few words) and the definition. I let them choose their own words as they read, but they have to have a certain number. That number is up to you. If you like this, good. If not, at least next time you have plenty of words to choose from!
