This is an interesting assignment since the nearly illiterate Bob Ewell is absolutely the last person in To Kill a Mockingbird who would ever consider putting his thoughts down in a diary. Bob would no doubt have considered such a literary pursuit a complete waste of his time, since he busied himself with illegal hunting and getting drunk during his daylight and evening hours. However, if Bob had decided to honestly put down his thoughts on paper, the most interesting event that he could have discussed would have been what actually happened on the day that Tom and Mayella met inside the Ewell house. If Bob had told the truth, he probably would have written that, coming home one afternoon,

"I come home an' caught a ni**er inside my house, and there my Mayella was, kissin' and huggin' him! I tried to get at 'im, but he lit out 'fore I could get m'hands on 'im. But Mayella didn't run, and I taught her a lesson alright. I nearly choked that li'l whore to death 'fore I ran to get the sheriff."
