Matter can exist in diffferent states. The atomic particles in a solid are closest together, in a liquid, further apart and in a gas, further apart still. To change phase from solid to liquid to gas, heat energy must be absorbed. To go from gas to plasma, even more heat energy must be absorbed. Therefore, as the temperature changes, the state that matter is in can change, when a critical temperture is reached. When a substance like water for example, goes from a solid to liquid state,  the molecules have absorbed enough heat energy to reach the melting point. When enough heat energy is absorbed,  the water reaches the boiling point.  As some molecules change states from liquid to gas, the process of evaporation occurs. If water vapor loses heat energy, the process of condensation occurs. This is what occurs when water vapor forms clouds and condensation produces rain.  It becomes liquid water once again.When liquid water loses heat energy and the molecules approach the temperature of zero degrees Celsius, the freezing point is reached and the water becomes a solid.There are some substances which change phase from solid directly to gas. This is the process of sublimation and it occurs in dry ice, for example.
