Sucrose and maltose are both carbohydrates, specifically disaccharides. Disaccharides are formed when two monosaccharide are joined together. Maltose is composed of two glucose monosaccharide joined together in alpha(1->4) linkage. On the other hand, sucrose is formed from one glucose and one fructose monosaccharide. 

The ratio of the H and O atoms of the two sugars is 1:1. Their chemical formula is the same which is C12H22O11. The reason why they are different is because of how the two molecules are structured and how they are attached to each other. Sucrose and maltose are called isomers because they have the same chemical formula but differ in the chemical structure.
