Although the First Philippine Republic was very short lived, it did succeed in overthrowing the Spanish, at least briefly.  It was established with a constitution (The Malolos Constitution), so the revolution was fairly democratic.  Unfortunately, the Spanish-American war ended and the Americans to it upon themselves to return the Philippines...
