You might want to think about some of the central themes that are presented in this story and how Orwell chooses to communicate them. Key to me is the presentation of despotism that runs central through the entire action of the novel. Note how, as the novel progresses, Napoleon (a great name for a tyrant) becomes more and more power hungry, disregarding the needs of his population in his own desire to get ahead. The power he has corrupts him into manipulating the truth and re-writing facts to his own advantage. There should be ample scope in this topic for an essay. Good luck!
You could also focus on the satirical elements in this novel. Understatement, irony, and other elements used to point out something worth making fun of in society without really looking like you're making fun of it. For instance, the animals take over because the humans were doing such a poor job of it in the animals' opinions, but without even noticing it,the animals become just like the humans--operating the same way, walking around on two legs, dressing in clothing. This is satire.
So, how does Orwell use satire and satirical elements to make his point? This would be a great topic, and one that would be both fun to write and read.
There are a number of topics that you could write on related to this book. A couple that come to mind are:
Write an essay in which you compare and contrast the leadership qualities of Snowball and Napoleon.
Write an essay in which you discuss the allegorical features of the story. You can discuss how each character is actually meant to represent real historical people and ideas. For example, Napoleon is really Stalin and Snowball is Trotsky, Mollie is human vanity personified in a horse. Almost all the animals represent something or someone.
