I think we're going to need a little more information in order to help.

You might be discussing the challenges of being given an assignment that asks you to go to active businesses to try to learn about what problems small businesses face and what solutions these businesses attempt to put in place.

You could also be discussing the challenges of learning big-picture lessons about entrepreneurship while looking only at indivual businesses...

Is either of these close to what you are looking at?

Are you talking about simulations, or actual real businesses?  I do think that students can create their own simple businesses just to see what it's like.  You can also simulate more complex business situations.  These will give students some real experience.  The disadvantage is start-up costs and time considerations.
