First of all, please note that this is a quotation from Jacques Cousteau and not a paraphrase. What you are asking us to do is to paraphrase a direct quotation. Let us look at one way to do this.
Jacques Cousteau was speaking on camera about the importance of the Antarctic. He said that the Antarctic has a huge impact on our climate because it is main place that cold comes from. The sun is the place where most of our heat comes from and the Antarctic is where the cold comes from. The cold water from Antarctica moves north and then rises up to join the warm water that is coming from nearer to the Equator. When that happens, the water on the surface of the ocean and the atmosphere above the ocean both get cooler. This system controls the temperature, but the system can be easily disrupted. We human beings are doing things that are disrupting this important system.
The main thing that made this difficult in my mind was that it was written pretty clearly. It was written in fairly simple words. Usually, passages that we paraphrase use big words or are hard to understand. This one did not have those characteristics so it was sort of hard to figure out how to convey the same ideas without reusing the original words.
Jacques Cousteau said that the Antarctic is the cold on earth, as the sun is our heat. The cold mixes with the warm climate of the land north and cools the air and water. However, he states that this process is at risk do to humans.
