This is a pretty wide quesion, since the time frame you specify covers a few thousand years. But I feel that the most significant advancement deals with just that-time. It's not so much the technology of time keeping, although that is a pretty fascinating topic in itself. Keeping accurate account of time began, in the opinions of many, in the Middle East about 5000 years ago. Obviously this is incorrect- even primitive man probably kept time by the stars, moon and sun. Still, the creation of more accurate methods probably began about 3500 B.C. in Egypt- this is what obelisks were for, essentially a tall sundial. The reason timekeeping is so significant is that it gave people the tools to keep track of time in greater detail. This is important for organizing life so more can get done in an efficient manner. This wasn't so important, probably, to hunter-gatherers, but to run the administration of a city or other large organizations it is essential. The concept of timekeeping and the technological advancements in doing so was probably the most significant technological developement of the ancient world.
