    "The lord of the flies" is revealed in chapter 8 -- it is the decapitated pig's head that Jack and the hunters impale onto the a spear.  The pig's head begins to attract flies because it is beginning to decompose.  Eventually, the pig's head begins to "speak" to Simon when he is alone in the forest.  This "Lord of the Flies" symbolizes evil or can symbolize the devil.
