The Barbecue! Bible

Steve Raichlen’s book is an all-encompassing homage to the grill. The recipes were collected from Raichlen’s three-year, 25-country trip. Totaling more than 500 recipes, Raichlen has sections devoted to drinks, appetizers, salads, breads, meat, seafood, vegetables, rubs, sauces, and desserts. He also includes a crash course on grilling and barbecuing, a list of the top twenty-five best “grilling and barbecue joints” in the world, and the ten commandments of perfect grilling.

There are more than twenty drink recipes in The Barbecue! Bible. Everything from Bahamian Sky Juice to a Smoky Martini. Raichlen’s quickly grilled appetizers such as Vietnamese Grilled Beef and Basil Rolls or Pastrami Grilled in Grape Leaves can be enjoyed while the main course is grilled. Raichlen puts a fresh spin on steak with his Palomilla, a Cuban steak seasoned with a garlic-lime marinade. Raichlen uses ordinary ingredients to devise some extraordinary dishes such as Peruvian Beef Kebabs, Rosemary Grilled Pork Loin, and Grilled Chicken with Saffron.

Raichlen tackles rice dishes in a chapter titled, “Rice, Beans, and Beyond.” His recipes for rice are from such diverse places as India, Iran, Thailand, and Brazil. The following chapter focuses on condiments such as Central Asian Pickles, Oaxacan-Style Guacamole, and Onion-Cilantro Relish which will enliven the simplest grilled chicken, fish, or steak.

Recipes for desserts—from the simple such as Uptown S’mores or Grilled Sugar-Dipped Pineapple—to the more exotic Lemon-Ginger Creme Brulees or Indian Cardamon-Pistachio Rice Pudding are included as well.

Whether the occasion calls for a simple barbecued meal of hamburgers and grilled chicken or a more exotic meal such as Grilled Salmon Kiev or Lamb and Eggplant Kebabs, The Barbecue! Bible has something to please every taste bud.
