What is Indian corn?

Indian corn is flint corn, a hard starch corn that thrived in the northern United States and Canada centuries before the Europeans arrived. Early Native American growers produced red, blue, black, yellow, white, and multicolored corns. Later growers continued to cultivate and selectively breed this corn, producing ears of every conceivable color. Indian corn is often used in autumn decorations.
