Purpose/Hypothesis

Vitamin C is a water-soluble vitamin that is essential for human growth and health. In this experiment, you will explore the relative quantity of Vitamin C in different juices. To measure the amount of Vitamin C you will observe the chemical reaction of Vitamin C with iodine.

Iodine mixed with water forms ions, which are charged particles. When ions mix with starch they produce a compound that has a blue color. Ascorbic acid, or Vitamin C, breaks up the bond between the ions and the starch, reversing the color change. The more Vitamin C in a substance, the quicker the bonds will be broken, and the faster the liquid will turn clear.
