Body Language.

What would they do?

Roll their eyes...fight? What?

Assuming this is after the play is over, and both Romeo and Juliet are dead, Paris would not have changed a whole lot in character.  However, the Nurse would be somewhat subdued.  She would not be as outgoing and confident as she once was.  She had a job to do.  She was to watch over/care for Juliet.  She should have gone directly to her parents when Juliet talked of marriage.  That was not her right to go behind their backs when she was employed by them.  So she would not have much to say.  If spoken to, she would answer politely, but her guilt would be too much, and anything Paris would ask of her would cause her to suffer.  The last conversation she had with Juliet was about Paris.  She figured it was best for Juliet to just marry Paris.  That was the last she heard from Juliet before she faked her death.
Paris, on the other hand, is a very mature and polite man.  He truly cared for Juliet.  He went to visit her grave and fought to his death in her honor.  He may ask questions of the Nurse to get more on Juliet's background, but he would never be rude. If he felt that a question was too much for her, he would apologize and politely end the conversation.  The Nurse would most likely just bow her head, cast her eyes down, and remain silent. She wouldn't ignore him, but she'd feel uncomfortable and she might ring her hands.
