In Where the Red Fern Grows, by Wilson Rawls, Billy trains his dogs Old Dan and Little Ann to hunt raccoons.  Raccoons are intelligent omnivores, hunted for their furs.  They are nocturnal; most active at night, so the best time for his dogs to track and chase these animals, treeing them for Billy to kill and skin. Hence, hunting at night, like the coons are doing themselves, is seen as the sportsmanlike way to hunt them.  In addition, until the price for pelts goes up and he gets released from the household duties, Billy has chores to do during the day and has studies as well.
