The ratio of domestic servants to the general U.S. population is half what it was in 1890, partly because immigration has ebbed, partly because of new and better-paying employment alternatives. Middle-class women employ mostly day workers, who tend to be blacks rather than immigrants or native-born whites. Only relatively affluent households can afford live-in help.
