Freshmen in all schools (except for Gallatin) must take an introductory essay writing course called "Writing the Essay." If you are in the College of Arts and Science, that is the only essay course you must take. Students in Tisch, Steinhardt, Stern, and Wagner must take another semester of "Writing the Essay II."
NYU also has a twist on the core curriculum idea. Students in the College of Arts and Science (NYU's largest school) must take a few courses in the MAP (Morse Academic Plan) program. These courses function as overviews in Western culture (literature, history, philosophy), world culture, and topics in Math/Science (withouth too much actual math). There is a huge amount of choice offered in MAP courses, which makes them pretty painless. You can take MAP classes at anytime during your four years (though you're encouraged to get them out of the way early.) The NYU website goes into more detail about the MAP program, but it's really less complicated than it sounds. And you'll hear all about it once you get to NYU--by your starting September, I guarantee you won't be confused.
Students in the Gallatin School of Individualized Study (my school at NYU) have almost no strict requirements--just to Writing Seminars, of which there is a large variety every semester.
Good luck!
