There are lots of references to pigs in the "real world" including, but not limited to, the Chinese zodiac. Like you have already discovered, some cultures revere pigs and worship them as holy. This is not completely untrue of LOF since Simon seems to connect with the beast represented by the pig's head on a stake in the middle of the forest. It is also worth noting that without the wild pigs on the island, the boys would not have had much sustenance in the way of protein. The pig's meat kept them alive. Like this, Piggy's logic and reason helped keep civil behavior alive until the boys gave in to peer pressure and fear and cast it aside. With the abandonment of reason and logic by the boys comes the murder of the symbol of reason and logic: Piggy's death.
