I believe she is a strong female character under cultural and historical context. She was wise, stood up for herself and took take of others. Tita is a sensitive woman who expresses her emotions through the creative culinary art. Tita has a nervous break-down due to the loss of what she considered her child, but anyone can have a break-down. She overcomes her depression and is able to face normal life again.
