Why is digital considered discrete communication?

A digital communication can be seen, even if it is not necessarily printed on paper. You can also print anything digital. A communication that is not discrete would be a conversation, or something that could not be seen and measured.
Digital communication is 2-state communication where signals are sent in on/off (0-1) mode and hence are considered as discrete as compared to the analogue mode where the signals are continuous in the wave-form.
