It would be difficult to say which is his most famous painting but the ones featured in Art History textbooks are a good source.
I would say that "Mont Saint-Victoire" would be the best one to write about since it very clearly shows what Cezanne was trying to do with his approach to painting. He wanted to change from the Impressionist approach of dots and dabs of color to a style of painting that looked more solid and structural.
