What about society in The Giver is revealed by the reaction to eye color?

This is in chapter three.

The uniformity which underlies the society extends to eye color, which probably indicates a measure of genetic engineering.  With a few exceptions, "almost every citizen in the community ha(s) dark eyes"; it was considered unusual and perhaps "unsettling" to be different in this respect (Chapter 3).  Jonas, a female Five, and the newchild Gabriel are exceptions who have eyes that are lighter, and all appear to have a corresponding gift that might make them capable of eventually receiving the great "honor" of becoming Receivers of Memories.
