I am writing a chemistry research paper. Do you cite it using APA or MLA?

No matter what the other considerations are, you should always do what your instructor asks. In the case of a Chemistry paper, I would generally lean towards APA but your instructor may ask for something else.
Generally speaking, MLA is used most frequently in the humanities such as English, History and related fields whereas APA is used in social sciences such as psychology, etc., and their related fields.
APA style is not limited to just the citations, though that is the way we usually think about it, but it also pertains to the style of the paper itself. APA style is supposed to be utilitarian and without flourish or things like figurative language.
