i am looking at a new old adage that would fit in with our quote letter. At the moment we are using the one below:�

We aim to differentiate and excel – so should you!

We are a conference centre and I'm in the process of rewriting conference quote letter we send out to clients; could you please help?

You could use something like this:

"Expect the best; settle for nothing less."

You are talking about a letter that aims at attracting customers to use the services of your conference center services. In short it is a marketing communication.

An effective way of making your marketing communication effective is develop clarity on the "USP (unique selling proposition)" or the "positioning" of your product and then develop your marketing slogans to communicate that USP or position effectively.

You can learn more about the concept of "positioning" in the book Positioning: The Battle for Your Mind written by Al Ries and Jack Trout.

Since you mention differentiating, I'm guessing you provide different service to different groups, or that you have something for everyone. I suggest using a phrase like: Make us your conference room! This may not be an adage, but it gets the point across.
