We are a conference centre and I'm in the process of rewriting conference quote letter we send out to clients; could you please help?

You could use something like this:
"Expect the best; settle for nothing less."
You are talking about a letter that aims at attracting customers to use the services of your conference center services. In short it is a marketing communication.
An effective way of making your marketing communication effective is develop clarity on the "USP (unique selling proposition)" or the "positioning" of your product and then develop your marketing slogans to communicate that USP or position effectively.
