The most accurate report of field hands in a Plantation came from Mt. Vernon, where George Washington resided. In the document, it states which jobs were performed by men and which were performed by women.

Jobs by women included: milking, weaving, cooking, basket making, tobacco stripping, house servant, washing, and more.

Male jobs included: bricklayer, raising and killing the hogs, overseer, blacksmith, carpenter, plowing, gardening, planting the corn, drive the wagon.

The links included will give you even more information on this.
