why is it significant that this cat will not leave the narrator alone

You did not mention which story you are having problems with, but I think it's "The Black Cat." If it is, the cat plays a very symbolic role in the story.
The story is told by an unreliable narrator that seems to have both an alcohol and mental problem, the BLACK cat that follows him around was believed to be a witch in the form of a cat. It is superstition and bad luck that follows the protagonist.
There can also be other interpretations, it could be a part of his subconscious represented by the delusion of a cat that exists only to keep tormenting the main character. This cat is also symbolic of the guilt that the protagonist has to live with.
