If so, what does this show about the characters?

I would say that yes, the attitudes and perceptions do change about the setting, particularly the wine cellar.  The wine cellar is supposed to be a place where people go to collect their fine wines that have been aging.  It is supposed to be a place of great pride, for example.  The narrator, however, turns it into a place of murder and deceit because he lures Fortunato to the cellar and then bricks him up after getting him drunk.  This shows calculationand planning to carry out this plan, so his revered cellar becomes a death chamber, which definitely changes his attitude about it. 

In addition, Fortunato's attitude is one of happiness and anticipation as he goes down into the cellar expecting only to have some of the Amontillado; he, instead, is slowly bricked up in order for him to slowly die.  He had no clue that this place would become his death chamber!  His attitude has definitely changed as a result of this.
