I assume you mean  The Prioress since the second nun is barely mentioned...  Described as modest and quiet, this Prioress (a nun who is head of her convent) aspires to have exquisite taste. Her table manners are dainty, she knows French (though not the French of the court), she dresses well, and she is charitable and compassionate.

Her features are fine--grey eyes, small mouth, nice wide forehead

I always saw her as vain--her coral bracelet-very rare at the time and how she puts on airs --the way she eats, the key phrase above is ASPIRES to have good taste.  She puts on airs by speaking French and through her nose, also her fine cloak  She cares a lotmore about animals than people!

She has a fancy engraved brooch with the letter "A" and the words "Love conquers all" in latin-- is she a mourning a lover?
