Well, for one, I think they were under much stress and anxiety having to remain quiet and still throughout the long days.  So, this came out in the constant bickering that went on between Anne and her Mother and between Mr. and Mrs. VanDann. I also think that as time went by, and Anne and the others became increasingly frustrated by Mr. Dussel, we see that they are becoming less tolerant of relatively minor things- another example of how they are stressed and anxious while living/hiding together.  I think the major example of this, however, is at the end when they're captured. As awful a fate as this was (and fatal, as it proved for all but Mr. Frank), Anne was quite relieved to be outside and able to talk and walk around during the day.  I think this shows that even though they are in an awful situation, the fear, anxiety, and stress that went along with hiding was gone.
