Each time the animals group to receive their orders on Sundays from Napoleon, the number is relatively the same.  The novel never mentions a specific number...just that the pigs, the sheep (as a collective whole, never individuals--notice they don't have specific names?), the ducks, the hens, the dogs, the horses, etc. all meet to receive their jobs for the day/week.  Of course, after the defection of Mollie and the various deaths on the farm due to defending the farm from the farmers and the executions of the confessors, the numbers of the farm animals decrease.  Later in the novel, the pigs and dogs are increased in number due to normal procreation.  The animals eventually all suffer deaths due to old age, as well as celebrate births and new populations.  Toward the end of the novel almost all the original group has died with the exception of Clover and Benjamin...the farm animals then follow the rules blindly since they never knew the original ideals proposed by Old Major.
